Kid friendly, company worthy, this Italian Chicken dish is my FAVORITE! It can be served keto, paleo or GF!

Serves 10
10 chicken thighs or breasts
1/2 cup Parmesan cheese
1/2 cup Almond flour
1 T Italian Spice blend
1/4 tsp sea salt
1/8 tsp freshly ground pepper
Choose: 1 bag of frozen sliced onions and bell peppers
or
1 large can of diced tomatoes, drained
1 regular can of artichokes, drained
In a 9x13 glass dish, arrange the chicken pieces in a single layer. Cover with the drained tomatoes and artichokes or the bag of onions/bell peppers (or both). In a separate bowl combine the almond flour, Parmesan cheese, Italian spices, sea salt and pepper. Sprinkle this across the top of the chicken and veggies. Bake at 350 for 45-60 minutes or until the chicken is cooked thoroughly. Enjoy over pasta, rice, cauliflower pasta or veggie spirals. It makes great leftovers (if there are any!!!)
