What do you get when you cross vegan eating friends with gluten free eating friends? It is our Super Yummy Sleepover Cake (that also happens to be our every occasion cake)! For the 4th of July we happened to add in season fruit (yes, we still have occasional strawberries in the strawberry patch!)
Super Yummy Sleepover Cake
Ingredients:
1 c of room temperature milk (non dairy or regular)
1 c boiling water
3/4 c oil of choice
1 T vanilla
1 T raw apple cider vinegar
1/2 c maple syrup (optional but oh, so good!)
1 1/4 c sucanut or coconut sugar
2 1/2 c GF all purpose flour
2 c almond flour
1 c cocoa powder
1 1/4 tsp baking soda
1 tsp sea salt
1-2 tsp finely ground coffee grounds from Mexico (The Servant Leader) or Bali (The Widow's Friend)
Preheat oven: 350 degrees
Bake time: 25-32 minutes
Grease a 9x13 glass pan.
Combine wet ingredients in one bowl.
Combine dry ingredients in a second bowl.
Add the wet ingredients to the dry ingredients. Stir well without over stirring.
Pour the batter into the prepared glass pan.
The cake is finished when a toothpick comes out clean. Do not overcook it. Cool before serving for the best flavor!
